Happy Monday! Grilled Veggie Goodness


Happy Monday Y’all!! That was my inner Paula Deen coming out.  How is everyone this Monday morning? I am sure you are excited to be back to work.  I worked all weekend and have a closing shift tonight which is never fun in my book.  

So I was reflecting last night and thinking about how the nights are getting shorter and the air is cooler and I happened to go through some of my pictures of food that I have and deciding which recipe to post. I decided on grilled veggies. I think it is still a great time to use that grill. This is a simple recipe and I am sure to please. This recipe is universal so you can do pretty much any veggie you want. I went with classic potatoes because they go so well with burgers if you are cooking a burger, but these would be great with any other meat at that. 

Don't mind the burgers in the pictures, that is for another day coming soon....





Here’s how you do it.

1.       1. Cut your veggies
2.       2. Put your veggies into a bowl add any seasoning you want (I used salt, pepper and grill seasoning)
       3. Toss with some EVOO
4.       4. Place on grill flipping after a few minutes (look at those awesome grill marks!)
5.       5. Take off the grill and enjoy!

You guys this couldn’t be simpler and it really helps bring out the flavors in the veggies.  I suggest you try this before it gets too cold out there, I promise you will it enjoy it.  If you do not have a grill, use a grill pan or you can do the same method and roast them in the oven (I will show you that next time).

BLT...salad?


Happy Wednesday everyone! I hope all is well with everyone. I have been a busy bee today. I had to cook my dinner for tonight this morning so that was fun. I haven’t looked at the pictures yet, but I really hope I took some good ones.  Do you want to know what it is?? Ok, a Lemon Risotto and Orange Balsamic glazed Chicken.   Sounds good? I will have to let you  know when I try them tonight. For now I have a super simple easy light lunch recipe. 

I love BLTs. Every summer when the tomatoes where ripe from the garden my parents would always make BLTs. I would be in charge of toasting the bread and my dad would cook the bacon. I swear I would eat five of these! I needed a lunch one day because I didn’t go shopping, but I had some precooked crumbled bacon on hand and also some cherry tomatoes from my garden.  Looking around my fridge I found what else but lettuce! After thinking I was going to have to buy a lunch it dawned on me to turn one of my favorite  sandwiches into a light lunch and it worked out perfect!
Real Bacon or just cook your own either way is fine

A one bowl light lunch or dinner

This is what you need and how you do it.

Lettuce, cherry tomatoes (or you can chop up a large one) and Bacon (you can use any kind you like or just buy it cooked just please make sure it is real bacon and not bacon bits. Those are not real bacon).
Add the ingredients to a bowl add a little Parmesan cheese if you like and then just top with a simple dressing, EVOO and vinegar or you could do a little EVOO and lemon juice.  If you want to take it over the top use ranch dressing, but I was trying to keep it simple and light.

That’s its guys! I hope you try it and now is the perfect time with tomatoes being in season.

I'm back...yet again. Easy Egg Mug Recipe

Hello all and welcome back, or should I welcome back myself? I know I was MIA last week but I am back and ready to go. I hope you guys are too.  I have some nice recipes coming up soon and I cannot wait to share them with you.  Did you guys eat anything interesting lately?  My roommates friend came over so I planned and cooked a really nice dinner party which I cannot wait to share with you guys either. I thought everything was really good, but I guess that’s me.  

So I wanted to start this week with a really quick and simple breakfast that will give you guys great protein and keep you going until lunch. It is an omelet in a cup! So simple and easy and you can do so many things with this. 

This is after I it was done cooking and I mixed it with a fork.
This is just your basic egg mug recipe and I hope you guy try this. My dad would do a slight version of this to make a homemade egg Mcmuffin, which I should show you guys in a post one day. It is great if you are short on time in the morning because studies show breakfast is your greatest meal.

3 Eggs and 1 egg white (this is how I like it, you can use egg beaters if you like)
3 pieces of turkey meat chopped and sliced
1/4 cup of frozen onion, green pepper, celery mixture (easy on the wallet and time)
A tablespoon or more of cheese (your choice)

Put the eggs into a large cup and mix until the eggs are all mixed and slightly fluffy.  Add you turkey meat and frozen vegetable mixture.  Add some black pepper to taste and give one more stir.  Place in microwave for 3 minute and about half way through cooking time mix or flip I( flip the top cooked part to the bottom and let the liquid egg mixture go to the top). 

After the three minutes take out, give it a look over making sure its done, it might need another 30 seconds, top with whatever you like (I love salsa on mine) and enjoy!

Happy Wednesday!

Hey everyone Happy Wednesday! I just wanted to let you know that I have not forgotten about you and i will be posting this weekend. I have been working a lot of mid-shifts lately which doesn't leave me a lot of time in the morning or night. So sorry for the lack of posts, but I promise this weekend will be full of good food!

Really quick what do you think of the new Next Food Network Star?  I think I am going to watch, I have been food network obsessed lately lol.

Two Ingredient Ice Cream and NO Machine!


So how is everyone so far this week??? My week as been an interesting one to say the least.  Mainly at work due to a poorly written schedule and managers not making good decisions. 

I do have something for you that will make your week.  Two Ingredient Ice cream with no ice cream machine.  

Go ahead and read that line again. I can wait. 

Yes you did read that right. Two Ingredient Ice Cream with no ice cream machine.  You must think I am joking or lying.  Nope.  Why would I do that to you? 

I saw this recipe last week before I left on my road trip and I thought this recipe was so perfect because I have been looking into buying an attachment for my kitchen aid machine to make ice cream. I decided I had to try this before I ran out and use my Bed, Bath and Beyond gift cards on the attachment.  I was actually saving this recipe but I saw this on one of my favorite blogs yesterday and decided I better share this with you guys before this becomes the next craze. 

So when I saw this the possibilities of what I could throw in it were endless.  I still had quite a bit of No Bake Cookies left that I made last week, so before I ran out and bought ingredients I decided these would be a perfect mix in. 

Ok I am sure you are ready for the recipe.  Here it goes. All you need is 1 pint of Heavy Whipping Cream and one 14 oz can of Sweetened Condensed Milk.  

Yep that’s it. What you add is your choice and I guess it is not so much two ingredients when you add your mix-ins even if you decide to throw anything in.  If you want just a basic vanilla just add in two tablespoons of vanilla (according to Eagles brand website).

It was very easy to make, and it only takes about 10 minutes. I was worried about how it would taste but it came out very rich and creamy and who could go wrong with chocolate and peanut butter?! No need for that attachment now.  I am becoming ice cream obsessed lol. I have so many things I want to do with this and I can’t wait to show you I am not ready for the holidays but they are just calling my name for this).

Recipe adapted from I am Baker originally from Kevin &Amanda. You can also find the recipe here on Eagle brand website.

Two Ingredient Ice Cream
  • 2 Cups (1 pts) Whipping Cream (original recipe uses Heavy Whipping Cream)
  • 1 (14 oz.) can Sweetened Condensed Milk
  • 1 tablespoons vanilla extract
  • 2 Cups of Chopped No Bake Cookies
Place your mixing bowl and beaters in the freezer for about an hour before making this. You want them nice and cold. Also make sure the Whipping Cream is also right out of the refrigerator. These ingredients have to be cold to ensure nice peaks.

Mix 1 can of Sweetened condensed milk with the vanilla and your chopped cookies. Set aside. Pour your whipping cream into your mixing bowl and slowly start mixing. Keep increasing the speed and mix until stiff peaks form. (This is your basic whipping cream. If you have never made homemade whipping cream do it! It is super simple and so much better than the canned or plastic container stuff)

When you have stiff peaks carefully add some of the whipped cream to the condensed milk mixture and fold in. Do not stir. Keep adding your whipping cream until it is all combined.  Pour into a tightly sealed container and freeze for 6 hours.  When ready take out and enjoy!

****You can whip heavy cream with a normal hand held beaters.  Just make sure your bowl and beaters are very cold and follow the same directions.
Ok a little over board but so good!

I'm back! Road Trip and Cherry Tomato Pasta


Hello all!! I am back.  How has everyone been these past couple of days?  I have been great. I took a small road trip, hence the reason I did not post anything. 

If you’re wondering what the road trip was well it’s a little thing called “The Longest Yard Sale,” and ok it’s not such a little thing.  It is 675 Miles and is from Hudson, Michigan to Gadsden, Alabama! It’s so cool!!! I already miss it.  This was my fourth year going on it and I didn’t think It was going to happen due to my recent move (well four months ago, but still pretty recent).   All along the road people are set up with garage sales or big fields are filled with people selling stuff.  There are a lot of high end antiques, but if you search you can find some pretty good deals.  











You have to be ready for this trip too with the sun and the hot weather and not to mention all the walking, getting in and out of your car, lol I’m not making it sound fun am I?? It really is fun and I hope to be doing it for many years to come. 

Thankfully when I was gone my neighbor watered my plants and they were still alive when I got home. I am thinking of baking her something.  Any suggestions? I had a ton of cherry tomatoes waiting and ready to be picked which lead me to tonight’s dinner. I am sure I saw this technique from somewhere aka Rachael Ray, but in my mind I had it all planed out.

Bring a pot of water to a boil, add salt and pasta (I used whole grain). Cook shy of al dente, save a cup of cooking water and drain pasta.

While the pasta water is coming  up to a boil, sauté a small to medium white onion with some garlic (I am out of garlic so I had to use powder) a fresno pepper for heat (you can skip this) salt and pepper in two TBS of EVOO until slightly translucent.  Add about a pint of cherry tomatoes, you could use two if you want more tomatoes and cover.  Let the cherry tomatoes burst and then uncover.  Add a half a cup of white wine (no wine, don't cook with wine, use chicken stock) and let cook out. Once cooked out add your pasta water and pasta.  Stir around until the water is absorbed. Add ¼ to ½ a cup of Parmesan cheese mix in.  Add a little cheese on top and serve.  

Guys this is a great dish to use up your cherry tomatoes or if cherry tomatoes are on sale.  It is super easy, super inexpensive and really delish.  Let me know if you try it.
