The Tale of Chocolate Chip Potato Chip Cookies...

Today I am going to leave you with The Tale Of Chocolate Chip Potato Chip Cookies. I have never made these before and always wanted to try and make potato chip cookies. Well after asking a manager what she would like me to bake her (she was having a rough day) I came across this recipe in a Paula Dean Holiday Magazine. Paula Dean is like the queen of desserts and sweets (if there is anyone else who is queen let me know lol) So I went with this.

First you have to get your ingredients out:


then mix it all together:


Roll into balls and press onto a cookie sheet:


Bake and this is what they come out like:


Now, the first batch i baked for the 13 minutes it said and even left it in for one more minute b/c they didn't look crispy on the edges.  Well after letting them sit, I went back to try one and to my dismay they were hard, really hard. I freaked out b/c I thought I did something wrong. Each batch after that came out earlier then the time it called for. See I like a nice moist cookie, but if you love crunchy cookies then this is for you. They smell like potato chips which I thought was really cool. I might try these again and take them out way before the time it says, or I may look for a new recipe to try. My manager said she liked them and that they are suppose to be really crunchy. I thought I messed them up the whole time. If you have ever tried Potato chip cookies let me know, I would like to know your thoughts.

Stuffed Pepper Stoup

Ok so here we go. I am new to the whole blogging thing, and I am excited to start. After a busy busy day on Monday, I wanted to come home and just cook even though I had a million things to do. I dunno its something about cooking that just makes me feel better. I wanted to make cookies for my manager at work, so I need something fast, good and fulfilling. I've been talking about making stuffed pepper soup with another friend and I decided to make it. I went online for a recipe and googled "Stuffed Pepper Soup" Quite a few came up and I decided to go with none other but one of my favorite cooks Rachael Rays. It was very simple and very quick. So here it is:

This is just some of the things you need:



Brown your meat and here is a tip, let the meat go, and get all brown and caramelized, don't mess with it!
Throw in your peppers and spices. I added garbanzo beans and frozen chopped spinach to bump up the fiber and protein. Once those are soft and your stock and canned tomatoes.



I cooked my rice on the side, otherwise it will soak up all the stock, and if you like that, by all means do that (I did it at the end for leftovers)and this is what you get:



It was so good and really fulfilling. If you liked stuffed peppers try this!!! It was fast and simple and the left overs are amazing. Make sure when you throw in the veggies to let the peppers get some what soft. It adds flavor to them, and it really makes it seem like them came out of the oven. Here is a link to the recipe.

Just a quick note, I used brown rice instead of orzo and didn't have basil so I skipped that. Enjoy!

First Blog!!!

Hello everyone and welcome to Matts Delights! This blog is for all my cooking adventures. I love to cook and even bake. I am not a chef and have no formal training. I watch a lot of food network and a lot of Rachael Ray LOL. I have been cooking for quite a few years now, but have gotten very serious about it this past year or two. This blog will have old and new recipes. I hope to one day start including my own recipes. There is so much to learn about food and I have a lot to learn. I would love for you to come to this blog and see food that you would like to cook. I will be open and honest about what I cook. If you see something you like, try it! I love food and it is always great when you can enjoy it, especially with friends and family.
