Tired and True…Game Day Pigs in a Blanket


Hello everyone! How’s it going? I’m super excited for today’s recipe even though it is tired and true.

Piggies in a Blanket baby!

Can you tell I’m a little excited? I’m sure everyone has made these before, but I have a little twist to mine. I add extra add-ins into mine. I don’t have the right picture to show some of the items that I threw in, but let me tell you it’s so good!!

Now I bought the wrong type of sausages, but it still turned out great.

If you don’t like what I put in mine, go ahead and put in what you want, I’m not looking.

Here is what I put into mine. Mustard and pickles. Delish.

Ingredients/recipe

Buttery Croissants
Cocktail Wieners
Mustard
Pickles

Unwrap your croissants. Place a cocktail wieners at one end put in your mustard and pickles and wrap from one end to the other.

Bake at 350 for about 10-15 minutes or until golden brown. Take out and  serve and enjoy!

Guys this is a great game day dish and so much fun. You can add whatever you like. You can add relish instead of pickles, or Dijon mustard if you like. If you have kids this would be a great dish to make with them.

Computer Melt Down and Slow Cooker Chicken Pot Pie

What a week!! I apologize for the delay in posting but my computer crashed and I didn’t know what to do. Thankfully with a lot of prayer and messing around I was able to get  my computer up and running. I do not know what I did, but thankfully it is working. I thought I lost everything including all my food pictures. I would have really cried if that would have happened because it would be like starting over for me. Plus I have a ton of pictures of my family and friends that I would cry over to if I lost.

Anyways the computer seems to be working like nothing happened, but I am backing up files to my portable hard drive just in case. 

How was your week this week?

I have been craving/desiring/wanting to bake a chocolate cake with a rich buttercream frosting, but that has yet to happen. I have also jumped off my workout routine and really need to jump back into it. I hate to admit it, but I have been slacking on things that I should be taking care of.

I do have a pretty good, balanced meal and it involves a slow cooker! I love my slow cooker it was an amazing gift and I love to keep using it for many great dishes.

Tonight I have Chicken Pot Pie from The Rachael Ray Show. I adapted mine and I am soo excited to share it with everyone. I hope you try this one and enjoy!

 Ingredients/Recipe
  • About 2 LB  boneless, skinless chicken breasts, chopped into bite-sized pieces (i just bought a package that was on sale)
  • 1/2 cup flour plus 3 tablespoons (I used Whole Wheat Flour)
  • Salt and pepper
  • Pam
  • 1 Sweet Potato (you can use a white potato, or butternut squash)
  • 3 ribs of celery, chopped
  • 3 carrots, peeled and chopped i used baby carrots just chopped up
  • 1 large onion, chopped
  •  1 can of chicken stock + one cup of water
  • 2 tablespoon Dijon mustard (or use regular mustard thats what i did)
  • a few pinches of dried thyme
  • a few pinches of dried dill
  • 1 cup of frozen peas
  • 4 store-bought biscuits


Chop your chicken into bit sized pieces. Put them in flour and lightly coat them. Using Pam, spray a skillet and lightly brown the chicken about 2-3 minutes. Add chicken and all your veggies to the crockpot. Season with salt and pepper and sprinkle in some dried thyme. Add your can of chicken stock plus 1 cup of water.

Cook on high for 4 hours or on low for 6 hours. Once done, add in 1 cup of frozen peas and the 2 tablespoons of mustard and stir. Also sprinkle in some dried dill (just a few pinches) if you like. Let this heat through and cook your biscuits or rolls, place in bowls and serve. Enjoy!

Pop your snack


Happy Monday everyone! Did you enjoy your weekend?  I was woken up by crazy thunderstorms, lighting and rain pounding on my window. What is even crazier is Friday night there was a snowstorm! Midwest weather is the best…

I hope everyone had a good weekend.

Tonight I have a simple and great snack. Popcorn! I love this stuff and I am not talking about microwave popcorn. I am talking about fresh, popped popcorn. It is simply the best.

It is so simple and I believe it tastes much better than the popcorn in a bag, but those are nice in a pinch.


This is what you need.

Ingredients/recipe

About ¼ cup of oil, I use canola
½ cup of popcorn kernels

Add oil to a large pot, cover and heat. Test the oil by throwing in a few kernels, when they pop add the rest of the kernels and cover, leaving the lid a little ajar. When the kernels start popping, shake the pot to make sure the popcorn doesn’t burn. When the popping slows down, take off the heat, add to a large bowl and enjoy.

If you want you can add salt or butter, but I think the oil gives it great flavor and I use a pinch of salt. If you want you can make different versions. Put in whatever spice you want when you put in the kernels and follow the rest of the directions. This is a great snack and would be perfect for any game day or the Super Bowl!

Learning from mistakes and enjoying Comfort food


So this week I made a mistake at work. Nothing I want to get into, but something I could have prevented. The one good thing about mistakes is they are learning tools. Since this happened, I am more cautious and aware of the things I am doing.

This has led me to two things. One I want comfort food. Food that makes me feel better is my type of comfort food. Secondly it makes me wants sweet, like a whole cake or a dozen cupcakes lol.  I am not showing sweets today, but I do want to show you guys a great comfort meal. Pork Schnitzel with waffle fries and green beans. I tried staying with the healthy theme, but I thought waffle fries would be perfect with this. 


  

Ingredients/recipe

8 thin boneless pork loin chops, (you can also thin out pork chops)
Salt and pepper
2 large eggs (you can use egg whites too)
1 1/2 cups plain breadcrumbs (whole wheat if you can find some)
EVOO
Your choice of fries
Your choice of any green

Using two dishes, put the eggs in one (beat them) and the breadcrumbs in another. Dip your pork chops in the eggs than the breadcrumbs. Heat 1/4 inch of evoo in a large skillet over medium heat. Fry cutlets 2 at a time (if two will fit) for 3-4 minutes on each side, until brown and cooked through.  You could also bake these at 350 for about 10-15 minutes. 

Heat your French Fries and green of choice as directed on package if using a package. 

It is as simple as that folks. I hope you guys try this and if pork isn’t your thing use chicken. I won’t know, and trust me I’ve used chicken before too.

Super Bowl Snack

With the Super Bowl right around the corner I decided to stray away from healthy recipes and go for a little something different. Nachos! I love chips and salsas. It is one of my favorite snacks and once I start eating the chips I cannot stop!


Today I have such a simple way of making them. There are many variations you can do to this, but here is a super easy way to make them.







Ingredients/recipe

Tortilla chips
Cheese
Salsa

Take your favorite brand of tortilla chips and lay them out on a 9x13 pan. Add cheese all over the top of the chips and bake in the oven at 350 until the cheese is melted. Take out and let cool for a few minutes then put on a plate. Add your favorite salsa and enjoy!

I told you, super simple and delicious. Now if you want to take it a further step, add some avocado or sour cream. You can add black beans, cilantro, green onions and the list goes on and on. Go wild and enjoy these anytime you want a snack or for a easy party dish.
