Recovering from Halloween…Still

How was everyone’s Halloween this year? I know I have talked about getting trick or treaters and I actually had some! I had about 20 trick or treaters. My first one was Darth Vader.  Something that happened that was interesting was a few kids asked me for more candy! I never had that happened. I was giving out about two pieces per kid. I had some princesses, Harry Potter, Jack Sparrow, a ladybug, and a few dead doctors and princesses.

Over the past few days I have eaten way too much. I always say everything in moderation, but I went overboard. I normally like to be careful and watch what I eat, but not this week.

I also started planning my Holiday Baking Extravaganza. More on this to come, but I am excited because Walgreens is have a good sale on baking goods this Sunday so I am excited, but more on this next week.

I have a really easy recipe and it is pretty light. This is also a great one for the summer on those hot days but easy enough to make when your low on time or need a light meal.  Its BLT Pasta salad. This is a really light salad that is good and good for you.


Here is what you need

1 Pound Whole Wheat Pasta
2 bags of lettuce or to taste
1 pint of Cherry tomatoes or 4 tomatoes diced
1 bag of Bacon or 6 pieces of Bacon cooked
Evoo
Salt and Pepper to taste
Parmesan Cheese to taste

Bring your pasta water to a boil, add salt and pasta cook to al dente. While the pasta is cooking, put your two bags of lettuce in a large bowl. Chop your Cherry tomatoes in half or add your diced tomatoes. Sprinkle in your bacon. Add your cooked pasta to the bowl and mix. Toss with a little EVOO, salt and pepper, Parmesan cheese and enjoy!

Bacon Cheeseburgers

Good morning, afternoon or evening, whichever it may be.  Are you enjoying your fall like weather? While I am not ready for the cold I do like fall.  I am already planning my fall baking and cooking. I have a few things in mind already.  

Today’s post is one I should have posted with my grilled potatoes. A Bacon CheeseBurger.  Yum! This is super simple and even though it might not be nice to grill outside you can make this on the stove top.  This burger has lots of flavor and is super moist.



Bacon Cheeseburgers


1 pound of ground beef, turkey or chicken (which ever you prefer)
¼ cup of crumbled bacon (either cook your own or buy premade, just make sure its real bacon)
¼ cup shredded cheddar cheese
2 TBS of Worcestershire sauce


Take all ingredients and mix in a bowl.  Divide meat mixture into four.  Take one fourth and shape into a burger, making sure to put a dent in the middle (it will rise during cooking).

Grill to how you prefer your meat, cook all the way through for chicken and turkey.  

Add whatever toppings you like and enjoy!  Serve up with roasted or grilled veggies!

BLT...salad?


Happy Wednesday everyone! I hope all is well with everyone. I have been a busy bee today. I had to cook my dinner for tonight this morning so that was fun. I haven’t looked at the pictures yet, but I really hope I took some good ones.  Do you want to know what it is?? Ok, a Lemon Risotto and Orange Balsamic glazed Chicken.   Sounds good? I will have to let you  know when I try them tonight. For now I have a super simple easy light lunch recipe. 

I love BLTs. Every summer when the tomatoes where ripe from the garden my parents would always make BLTs. I would be in charge of toasting the bread and my dad would cook the bacon. I swear I would eat five of these! I needed a lunch one day because I didn’t go shopping, but I had some precooked crumbled bacon on hand and also some cherry tomatoes from my garden.  Looking around my fridge I found what else but lettuce! After thinking I was going to have to buy a lunch it dawned on me to turn one of my favorite  sandwiches into a light lunch and it worked out perfect!
Real Bacon or just cook your own either way is fine

A one bowl light lunch or dinner

This is what you need and how you do it.

Lettuce, cherry tomatoes (or you can chop up a large one) and Bacon (you can use any kind you like or just buy it cooked just please make sure it is real bacon and not bacon bits. Those are not real bacon).
Add the ingredients to a bowl add a little Parmesan cheese if you like and then just top with a simple dressing, EVOO and vinegar or you could do a little EVOO and lemon juice.  If you want to take it over the top use ranch dressing, but I was trying to keep it simple and light.
