Sub Week!

Hello! How was everyone’s weekend? I was lucky enough to have it off and I relaxed, cleaned, enjoyed the beautiful weather, and planned meals.

My poor roommate either had someone break into his car, or someone ride along in his car. We put boxes into the back of his SUV and noticed that the screen cover was pulled all the way out, and the blanket he has back there was all out of place and bunched up. He wasn’t sure when it happened, or how, but it is pretty scary to think that someone went into the back of his car and possibly rode along.

On a lighter note I am excited to announce SUB WEEK! Yes a week full of homemade subs. These are simple, affordable, healthy subs that you can make at home. These are just suggestions. You can pretty much do anything with these subs so here is my first sub and a take on it.

The only thing about this sub is I cannot figure out a name.  Its not a quite a rueben, but its close.

This is a Turkey Giardiniera and sauerkraut

Wrap tightly in tin foil

look at that, I want to eat the whole thing!

my mouth is drooling...

look at this! so excited!

Ingredients/recipe
1 loaf of whole wheat bread
1 jar of giardiniera, chopped
1/2 pound of deli turkey meat
Swiss cheese
Mustard

Preheat your oven to 350.

Cut your bread in half, but don't slice all the way through. Put a layer of Swiss cheese, turkey met, giardiniera and mustard. Wrap tightly in tin foil and place in oven for about 10 minutes.

Take out and enjoy!

I love homemade subs because you can do anything with these! I hope you guys make some homemade subs and enjoy!

Lunch with the President

Hello! So I am super excited about this week because I am having lunch with the President! How cool is that? Now that I have you going, this is not the President your thinking of. I am having lunch with the President of the company I work for. I won this, along with three others, at a meeting I had to go to about a month ago.

I’m super excited about it, but what to you ask a the President of the company? I have a few questions lined up, but I am hoping I don’t make a fool of myself. That would be embarrassing.

I will tell you guys more about this after this happens. Today I am giving you guys a super easy lunch or even dinner. Do you remember the Lavash I talked about? I’m just using that to make a wrap. I am Lavash obsessed lately. I’m excited that I can buy this at a local store. This is a great lunch and simple to make in 5 minutes. This is what you need to do.

I love how this looks

Can you tell I like mustard?

Ingredients/recipe
Serves 1
1 sheet of Lavash

A few slices of cucumber, tomatoes, onion and lettuce
Any meat you would like, I used turkey, and any condiments you like. I used mustard, lots of it, relish and olive oil mayo

Put all of your ingredients in the middle of the lavash, fold the top and bottom and roll!

How simple is that guys? I wanted to show you this because its super simple and easy to make. Its heart healthy, and it costs way less than eating out.

I hope you guys try this and enjoy!

New Year’s Resolutions and a Turkey Egg and Cheese Bake

Hello everyone! How’s it going?

I was thinking today about being healthy, saving money, and New Year’s Resolutions. Have you made any Resolutions this year? I would like to say I did, but I really didn’t. In my mind I made a list of things I need to take care of such as; getting ready for taxes, cleaning my room, cutting coupons and many more. What I also planned on doing is practicing the piano again because I used to be very well at it. Many of the things I planned or thought about haven’t been done.

What about you? Are you following your New Year’s Resolutions or are you planning on getting things done that need to be taken care of?

A few other goals I am trying to set for myself are food goals. I want to bake more bread and learn how to decorate cakes. These are just some of my food goals that I hope to accomplish.

So enough of goals and resolutions (and if you do have any stick to them, you  can do it!) let’s talk food.

How does a really good BLD sound? BLD if you don’t know is a Rachael Ray term for Breakfast, Lunch or Dinner. I saw this recipe in her Everyday With Rachael Ray magazine months ago and though it sounded delicious. It’s a Ham, Egg and Cheese bake. It is soo simple your kids can do it with a little help. This is a really nice breakfast and healthy. It has yummy English muffins on the bottom topped with ham, eggs and cheese. You cannot go wrong with that in my book. I made a few changes to make it slightly healthier but pretty much kept it the same. I really hope you guys try this one.

This is right before you add the extra cheese, omg I could have eaten this than!

Ingredients/recipe
  • 4 to 6 whole wheat English muffins cut into 1-inch pieces (about 4 cups)
  • 8 ounces sliced deli turkey, coarsely chopped
  • 2  cups shredded cheddar cheese
  • 3 tablespoons finely chopped fresh chives
  • 6 large eggs
  • 1/2 cups milk
  • Salt and pepper
  • 2 plum tomatoes, thinly sliced
.

Directions:

1.      Preheat the oven to 350°. Grease a 13x9 baking dish. Layer the English muffins on the bottom top with, ham, 1 ½ cups cheese and 2 tablespoons chives in the dish. In a medium bowl, whisk together the eggs, milk, 1/4 teaspoon salt and 1/2 teaspoon pepper. Pour into the dish and top with the tomato slices in an even layer.
2.      Bake the eggs until nearly set, about 30 minutes. Sprinkle the remaining 1/2 cup cheese and 1 tablespoon chives on top and bake until golden.

I cannot tell you how much I love this dish and how good it is. It is also very changeable and you can do almost anything you want with it.

I hope you try this and like it. Enjoy!

Bacon Cheeseburgers

Good morning, afternoon or evening, whichever it may be.  Are you enjoying your fall like weather? While I am not ready for the cold I do like fall.  I am already planning my fall baking and cooking. I have a few things in mind already.

Today’s post is one I should have posted with my grilled potatoes. A Bacon CheeseBurger.  Yum! This is super simple and even though it might not be nice to grill outside you can make this on the stove top.  This burger has lots of flavor and is super moist.

Bacon Cheeseburgers

1 pound of ground beef, turkey or chicken (which ever you prefer)
¼ cup of crumbled bacon (either cook your own or buy premade, just make sure its real bacon)
¼ cup shredded cheddar cheese
2 TBS of Worcestershire sauce

Take all ingredients and mix in a bowl.  Divide meat mixture into four.  Take one fourth and shape into a burger, making sure to put a dent in the middle (it will rise during cooking).

Grill to how you prefer your meat, cook all the way through for chicken and turkey.

Add whatever toppings you like and enjoy!  Serve up with roasted or grilled veggies!

Enjoy!
